I’m going to let you in on a little secret. Trader Joe’s sells pizza dough for a dollar and it is both vegan and delicious. I personally prefer the garlic herb flavor, but classic is great too. This week, I decided to have a pizza making party so I picked up five bags of dough, enough for ten people.
For sauce, I made pesto and vegan cashew cheese, a few of my friends brought purchased tomato sauce.
Cashew Cheese
2 cups raw cashews soaked for at least 2 hours
¼ cup nutritional yeast
1 lemon, juiced
½ tsp salt
¼ tsp paprika
¼ cup water
- Allow the cashews the soak as long possible, warm water works best.
- Drain the cashews and add to the blender with the rest of the ingredients.
- Blend until the cashews create a smooth creamy texture.
- Blend until a spreadable paste is formed.
As you and your guests enjoy some pizza, I recommend listening to The Pizza Underground. The band covers The Velvet Underground’s greatest hits with pizza themed lyrics. Although they sound pretty good, their lyrics will have you laughing.
